QUESTION: What happens when two grandmothers’ cookbooks meet at ANKER? ANSWER: Food is made from scratch. This Friday, 9 October
Starter: DKK 55. A choice of the house fried herring, spice-marinated herring or herring of the day. Schnapps: Krone, Nordguld and O.P. Andersen Main Course & Dessert: DKK 195. Skipper’s stew, slow-simmered salt-cured veal shoulder with crushed onions and potatoes, served with home-pickled beetroot and chives. Accompanied by sourdough rye bread, dripping and butter. Rainbow ice cream with homemade old-fashioned waffles.

Grandma would have been around 110 years old today. When she was young, she started as a maid and “went into service”, as it was called back then. Later, she worked as a cook and housekeeper for several wealthy families in the large villas north of Copenhagen. Over a lifetime in the kitchen, she collected a wealth of wonderful, classic recipes. I have dug out her old handwritten cookbook, and it turns out that my mate has done exactly the same with his grandmother’s cookbook. We are now going to put on our chef’s jackets and revive our grandmothers’ classics so they are not lost to history. We celebrate traditional Danish food culture every Friday in October at ANKER.
